Salted Caramel Donuts (low-carb, low- sugar)

Donuts!! Like who doesn't like donuts? I have a complicated relationship with carbs. I love them but they do not love me. I eat too much carbs and my body go CRAZY!!!! We are quarantined in Texas, it has been raining a lot and we had some days with temperatures in the low 60s. Perfect conditions to eat a warm donut. A life without donuts is not life!!!! Are you with me?
So...... I found a donut mold to bake them !! YASSS!!! . The texture is like an old-fashioned donut. The glaze is the perfect Salted Caramel, if you are not crazy about Salted Caramel I will provide other toppings options at the end of this post.
Dough:
1 packet of fast rising yeast
1 tablespoon of sugar
1/4 cup of Sola Sweetner
1 egg
3 cups of Carbquick flour
1 cup of warm water
Mix 2 cups of Carbquick with the yeast, sugar, sweetener and warm water. Once you have the dough add egg and mix it up with your hands. Let the dough rest for 20 minutes. Now add the other cup of Carbquick gradually. Until the dought doesn't feel sticky. Fill the donut circles with dough. This makes exactly 6 donuts. Bake the donuts at 350 for 15 minutes until fluffy and golden. Here is a little picture of the mold I used. I have tried the silicone molds and they did not work well, this mold was way better.

While the donuts are cooling down a little( I love to eat them warm).
Glaze:
*3/4 cup of Swerve Brown sugar
*2 oz of half and half
*1 tsp of vanilla extract
*1/4 cup of Swerve powdered sugar
*1 tbs of butter
Instructions: Heat the half and half and the butter for about 30 to 40 seconds. Add the brown sugar , powdered sugar and vanilla. The glaze should look like butterscotch. Do not let it cool. As soon as all is mixed, drizzle it over each donuts and you can sprinkle with nuts. These donuts refrigerate well, just warm them in the microwave for 30 seconds before eating the next day. They can last up to 4 days in the fridge.
I love to just warm a donut and enjoy it with my afternoon coffee.
