Happy Valentine's day!!!! These cake balls will make your Valentine's the best day ever. They are delicious-, moist , decadent and HEALTHY!!! Yields 18 cakeballs
INGREDIENTS: 1 cup almond Flour 2tbs Coconut Flour 1/2 cup Coconut Sugar 1/4cup Coconut oil 1tbs Vanilla bean paste 1/4 tsp salt 3 large eggs 3 oz of Water 1tsp Baking Powder
Procedure: Melt the coconut oil for 30 Seconds. Add the coconut sugar and mix well.Add the eggs 1 by 1 incorporating the eggs before adding the next one. Add salt , baking powder, vanilla, almond flour , Coconut flour,and add water. Grease the cake balls mold( I use non-stick spray). Fill each hole halfway. Close the cake pop maker and bake at 350 for 10 minutes insert a toothpick if it comes clear is ready, if not ,check every 2 minute.Please do not overcook or they will turn out dry. Take out the cake balls and place in a dish to cool down (around 10 minutes in the freezer). Garnish with Clean Chocolate Ganache and nuts!
CLEAN CHOCOLATE GANACHE 1tbs Coconut oil 1.5 Tbs Coconut Palm Syrup/Honey/Maple (Coconut Syrup is the best is low glycemic) 1tsp vanilla extract 2 tbs Unsweetened Dark cocoa powder.
Instructions: Melt the coconut oil until liquid.Add all the ingredients until you have a smooth Chocolate syrup.Drizzle over the Cake balls , top with nuts and chill.After 20 minutes the Ganache will be hard and crunchy.
