Chocolate Brownie ( low-carb/vegetarian)

My youngest daughter LOVES brownies! She has been asking me to bake some, but I have goals and Summer is around the corner. If I make brownies, I will be all over them with a chocolate mustache on my face and then have a guilty party. I needed to reconcile the mommy in me and the Trainer. This recipe has no guilt and no shame. They are fudgy, moist, delicious and no sugar. We use Monk Fruit or Erythritol to be sure they are sugar free without the after taste feeling ,and coconut milk to keep them moist. My daughter loved them and I know you would love them too. I Finished them with a drizzle of melted Peanut butter that after resting in the fridge becomes a crunchy crust that elevate the brownie. You can add any topping you want to the recipe : dried fruits, nuts or cream cheese ribbons. Go wild!
Ingredients:
1 cup Full fat Canned Coconut milk
1 cup of Non GMO Erythitol
1/2 cup of Hershey's Special Dark Cocoa Powder
1tbs of Vanilla Extract
1tbs of Baking Powder
1/s tsp of salt
2 eggs
2 cups of Carbquick
Procedure:
Using a powerful blender or a coffee grinder grind the erythritol, that will make it looks like powdered sugar and will make it easier for mixing. Pulse for 10 seconds and that should do the trick. Once the erythritol has been powdered, mix it with coconut milk and the dark Cocoa. Add the eggs and incorporate.
Start adding the baking soda, salt and the Carbquick gradually alternating with mixing . Finally add the Vanilla extract. Grease or spray non- stick spray on a 8x8 pan.Bake at 325 for 30 minutes. Do not over-bake. These brownies are fudgy, so it is important that you you do not overcook. They should be brown on top , a little crunchy around the edges but fudgy in the center. Once they are bake, let them rest for 20 minutes and then chill for 20-30 minutes. They are delicious. If you would like a sweeter brownie just add a little more Erythritol to taste . I love to melt Peanut Butter with a little Coconut Palm Syrup and drizzle the mixture on top is like a healthy Reese's pb cup!

Note: If you are allergic to coconut milk , swap for 1/2 cup of melted butter and 1/2 cup of your milk of choice.
