Low-Carb Vanilla Cake with Cream Cheese Frosting

February is here! Hearts, candy, chocolate and sweets everywhere . Temptations is everywhere and you are wandering if you can stick to your low-carb W.O.E. ( way of life) or if is worth a cheat. I am here to rescue you. This Low- Carb Angel cake is spongy, high fat, no sugar and high in protein and fiber. I topped it with a Cream Cheese Frosting and that gives it a Cheese Cake filled feel that I adore!
Ingredients:
Cake
1/3 cup of Carbquick
2 tbs of erythritol or Sola Sweetener
1 tsp Vanilla Extract
1 tbs Meringue powder
1.5 tbs of Grass-fed butter
1 pinch of salt
1/2 tsp of baking powder
1 tbs of Heavy cream
1 oz of Water
Frosting:
3 tbs powdered Erythritol or Sola sweetener
6 tbs of Whipped Cream Cheese
1 tsp of Vanilla Extract
Procedure: Mix all the ingredients for the cake until batter is smooth. Grease a ramekin or spray non- stick spray. Pour batter and microwave for 1 minute. Let the cake rest for 1 minute. Place it in the fridge while you make the frosting.
Frosting: If you do not have powdered sweetener you can make your own. Just place it in your coffee grinder or in your Ninja Blender and pulse it until the sugar looks like powder instead of granules. Mixed the cream cheese, the vanilla and the powdered sweetener. Mix it all in until everything is incorporated. Take the cooled cake and put a dollop of the cream cheese mixture. You can decorate with a drizzle of Sugar- free chocolate or with a drizzle of homemade raspberry syrup. I used sprinkles for visual effects but I can eat it just white and simple. If you want to keep it low sugar you can sprinkle Cinnamon and crushed nuts.
Notes:
If you are using Splenda or Nutrasweet please adjust recipe. Erythritol and Sola Sweetener measure cup by cup to sugar but other sweeteners are 3 times more sweet, so be aware.
If you don't have meringue powder and you use whole egg, cake will be more like pound cake than an Angel Cake.
