Low-Carb Chocolate Truffle

Chocolate is a delicious, creamy, little morsel of Joy. Over the years chocolate has received a bad rep. Chocolate in itself is not unhealthy. On the other hand, chocolate is full of antioxidants, helps to regulate blood pressure and prevents cardiovascular diseases. However, when chocolate is mixed with high-fructose corn syrup, colorants and artificial ingredients , that is when things get messed up .If you are following a low-carb lifestyle, I have your back! I have been following a low-carb lifestyle and if you know me, You know I love desserts! These Truffles are natural, decadent, delicious and full of Good fat! Usually, regular Chocolate, get your addicted neurons all crazy. These Truffles give you all the decadence of a truffle but it also satiates your sweet tooth without craving more sugar! Isn't that awesome?
Ingredients:
4 tbs of Peanut Butter ( crunchy or smooth)
3 tbs of unsweet Cocoa powder
3 tbs of Coconut Flour
1tsp of Vanilla Extract
1 pinch of Salt
3 tbs of Sola Low- Calorie Sweetener or Birch Xylitol
Procedures:
In a small saucepan put the Peanut Butter, Vanilla Extract, salt and 2 tablespoons of the Sweetener to simmer in very low heat. Move it constantly. Once the Peanut Butter is melted, add the cocoa powder. After the cocoa has been incorporated add the Coconut flour one tablespoon at a time. Be sure to incorporate the coconut flour before you add the next tablespoon. Once the mixture is combined, put it in the fridge to cool down for about 30 minutes. Once the mixture is cool, take a melon baller to scoop the mix in your hand and give it a round shape. The texture will be similar to a firm Cookie dough. Once the truffle is shaped, you can roll them in nuts, unsweet cocoa, shredded coconut or my favorite, sprinkled them with Sola Sweetener ( like the picture above) so they look elegant and sparkly.
This recipe yields around 10 truffles. After rolling them in shape, place them again in the fridge so they can get firmer. They can last for over a week in the fridge.
