Skinny Chicken Pozole (Vegan option included)

Temperatures are dropping , days are shorter and we start to feel nostalgic for comfort food. Nothing says comfort food like Pozole. Pozole is a delicious Mexican soup usually made with chiles and pork. This recipe is a red pozole and made with chicken to have the comfort food and flavor without the added calories. If you are Vegan, scroll down to see how you can make this Mexican Staple.
Ingredients:
4 cups of Organic Chicken stock
5 chiles Guajillos dried
Tbs of minced garlic
4lbs of chicken breast tenderloins
3 Chile de Arbol dried (if you want it to be spicy).
1 big can of Hominy (Pozole)
Salt to taste ( I used 3 tbs of Himalayan salt).
Procedure:
In a pot place the Chicken Stock, the Guajillos,salt and the chicken Breast(if you are doing the spicy version add the Chile de Arbol too). Cook them in medium heat. After 15 minutes, take out the Guajillo chiles ( and Chile de Arbol) and 1 cup of the hot Chicken stock and place them in a blender. Also, add to the blender the garlic. Liquify the GuaJillos with chicken stock( around 1 minute in the Blender). Add the Guajillo mixture back to the pot and add the Hominy (Pozole). Keep cooking in medium heat. Once it starts boiling, reduced the heat to low and remove the Chicken Breast. Shred the chicken using 2 forks, You know.... Wolverine Style.
Add the chicken back in the pot and check if the soup needs more seasoning.
Let it simmer for at least 10 minutes, so the the Chicken can soak up all that chile goodness.
Time to Eat: The traditional way to eat the pozole is with Shredded Cabbage, radishes, lemon, chopped onions, chopped Jalapeños and delicious creamy cubes of avocado.
Vegan option: You can substitute the chicken for Tofu or if you are doing a Soy- free diet, just add black beans and quinoa.Change the Chicken stock to Vegetable stock. If you are doing the vegan version. Cook the chiles in the stock, liquify and then add tofu, beans or quinoa.
