Creamy Quinoa- Coconut Pudding

Creamy Coconut-Quinoa Pudding
4 servings
Ingredients:
3/4 cup uncooked quinoa, drain and rinse 1 (14 ounce) can l coconut milk 4ounces of almond milk 2 oz 100% pure maple syrup or organic agave or Turbinado raw sugar. 1 teaspoon Vanilla extract or Vanilla bean paste 1 teaspoon of Cinnamon Shredded unsweetened coconut or dark chocolate shavings for garnish.
Procedure:
Bring coconut milk, cinnamon and quinoa in a small sauce pan to boil over high heat. Reduce heat to medium- low, add in maple syrup and vanilla and continue to cook, stirring occasionally, about 30 minutes until mixture is creamy and pudding like consistency. Place mixture in a bowl in the refrigerator to cool down, a couple hours. Serve about 1/2 -3/4 cup serving of pudding in small dish. Garnish with shredded coconut or dark chocolate shavings . Add some almond slices or walnuts if desired.
