Creamy Tomatillo Dressing

I am Puerto Rican and I have a confession....I love Mexican Food! Caribbean food is delicious and has a lot of flavors dancing at the same time flirting with your taste buds.
It was not until I moved to Texas that I was introduced to Spicy food! I love that creamy, green sauce that they serve with your chips at the Mexican Restaurant. Why does this sauce has to be just for chips? Seriously , I can drink this stuff like a shot.
This Tomatillo Dressing is great for chips, over tacos, eggs or the perfect dip for a quesadilla. I love to drizzle it over my salad. This Tomatillo dressing is full of flavor, good fats and the spiciness level can easily be modified to appeal your taste. This dressing is also Portion Fix approved and Paleo.

I love to make a big batch , separate them in snack bags and freeze them so I can use it whenever I need it or give it as a treat to my friends.
Here is the recipe:
4 tomatillos ( washed and peeled)
3 serrano peppers
2 tbs of olive oil
1 tbs of salt
1 tbs of minced garlic
Procedure:
Boil the tomatillos and the serranos for 15 minutes in a medium saucepan.Add enough water to cover the tomatillos and the peppers. Take all the Tomatillos , the serranos and 1/2 cup of the boiling water and place it in the blender. Add the salt, olive oil and garlic. Blend it all until smooth and creamy. When it is done. Place it in non- plastic container to cool down. Once is Cooled, separate in portions and freeze. This sauce can last up to 1 week in the refrigerator with a lid. If you want it less spicy use just 1 serrano pepper.
