Low-Carb Vanilla Cupcakes

I am a health coach but I have a sweet tooth. Nothing brings more joy to my life than a delicious cupcake with some Puerto Rican coffee! Cupcakes are delicious but can definitely hinder your progress .It has all the bad stuff sugar, refined flour and bad fats. Did you know Sprinkles cupcakes have over 400cals and more than 35 grams of carbs? Well, your days between choosing reaching your goals or a cupcake are Done!!!! Guess What????
You can have your cake and eat it too.
This cupcakes are only 149 cals, no sugar and are high in fiber!!! You can have them as dessert, grab-and- go breakfast or as pre-workout snack! Top it with fruit, Tru Whip or Peanut Butter. I know What a Joy!
Recipe:
2 CUPS Carbquick flour
1/4 cup Silk unsweetened Coconut milk
1/2 cup of water
1 tsp cinnamon
1 Pinch of salt
2 EGGS
1 tsp Baking powder
1tbs Madagascar Vanilla extract
2 OZ of soften grass-fed butter
1/2 cup of non G-M-O xylitol
Instructions:
Start creaming the butter and xylitol.
Add the eggs,coconut milk and vanilla. Incorporate ingredients. START adding Carbquick flour and water alternating.
Add salt , baking powder and cinnamon. Mix until no lumps are seen.
Divide among 9 cupcake wrappers and bake for 20 minutes at 325.
Cool them down and top with your favorite topping : Organic Buttercream, peanut butter or Whipped Cream.
