Low-Carb Pancakes

I am Puerto Rican and for default, that makes me love carbs! After I hit my 40's my body was not metabolizing carbs the same way. After some search I realized low-carb ( less than 40% of your calories from carbs) was the route for me. In the morning I need to eat something buttery,fluffy and doughy.This recipe is easy ,delicious and a crowd pleaser. I topped it off with Raw honey and it just feels like a treat! Without the honey this recipe has 12 grams of proteins, 28g of fiber, 0g of sugars and 12g of fat. This recipe is great for low-carbs lovers and diabetics.
INGREDIENTS:
2/3 cup of Carbquick flour .
Pinch of cinnamon
1/4 tsp vanilla extract
Water to desire consistency(I added 1/3 water).
1tbs butter
2tsp of Raw Honey
PROCEDURE:
Put the butter on the pan at medium heat. Mix all the ingredients together. Pour the batter on the pan and flip when the top is a little bubbly or less runny. When the pancake is golden brown on both sides and firm to the touch,take out. Drizzle with Raw Honey. Enjoy!
